Sweet potato black bean tacos
These are great to make, and fairly easy. Perfect to make with the whole family! This is one of the first recipes I made when I was starting cooking, and it’s one of my favorites.
Best Sweet Potato Tacos on the Planet
1 red onion, diced
1 large sweet potato, peeled and diced
2 tablespoons olive oil
1/2 teaspoon smoked paprika
1/2 teaspoon chili powder
Salt to taste
1 (15-ounce) can black beans, drained and rinsed
1/2 cup salsa
1 lime (optional)
1/2 cup sour cream (optional)
Tortillas, Mexican cheese, and any other toppings you want!
Preheat oven to 400ºF.
Stir the onions and potatoes with the oil and seasonings in a bowl.
Transfer the onions and potatoes to a sheet pan, place in oven.
Roast in oven for 15 minutes. Stir and roast 15 minutes more.
Stir the salsa and beans in a saucepan. Cook over medium heat until warm.
Make the lime crema (optional): Put sour cream in a bowl and squeeze in the juice of half a lime. Mix until smooth. Season with salt and paprika, if you want. Cut the leftover lime wedges.
Put the beans, sweet potatoes, and onions on tortillas, top with cheese, crema, and your favorite toppings. Serve with a squeeze of fresh lime juice.
